Banana Blueberry Muffins

And now, for a truly yummy, yet healthy muffin!  You won't feel any guilt giving these to your kiddos for breakfast or a snack.

What you need 

3/4 cup non- or low-fat buttermilk
3/4 cup brown sugar
1/4 cup canola oil
2 large eggs
1 cup mashed bananas (about 3)
1 cup regular flour
1 1/4 cup whole wheat flour
1 1/2 tsp baking powder
3/4 tsp cinnamon
1/4 tsp baking soda
1/2 tsp salt
1/4 tsp nutmeg
1 1/4 cup blueberries, fresh or frozen

Preheat oven to 400 degrees.  Spray muffin tins like crazy.  I mean that seriously.  Spray them well.  Whisk buttermilk, sugar, eggs and oil in a bowl.  Stir in bananas.

In a seperate bowl, whisk flours, baking powder and soda, cinnamon, salt and nutmeg (I sifted these together).  Fold into your wet ingredients.  Fold in the blueberries.

Divide batter into muffin tins.  Fill to the top.  Bake until tops are golden brown and toothpick comes clean, about 20-25 minutes for regular sized muffins.  If you're making mini-muffins, bake 12-14 minutes. 

Now, this is an important step and one I usually completely forget and don't follow, but you shouldLet your muffins rest in the tins for 10 minutes before trying to pop them out.  After this, let them cool on a wire rack.
